Eggplant, Aubergine or Brinjal, can sometimes be difficult to cook when following a diet plan due to a lack of eggplant cooking ideas. Here I will share with you a healthy and tasty eggplant terrain with basil sauce recipe, keeping in mind low-calorie intake. Cook to Impress 🙂
Calories – 120c per terrain
Prep time – 5 minutes
Cook time 15 minutes
Serves – 2
Ingredients :
1 Eggplant (big size)
200gms Prawns (or 2 per eggplant slice)
Spinach Leaves
Tomato
Basil sauce
Seasoning (salt, black pepper, and chili flakes)
Garnish (black sesame seeds and spring onion)
Recipe :
- Preheat the oven on 180C for 10mins. Meanwhile steam cook prawns with salt, pepper, and red chili flakes for about 4-5mins.
- Cut round slices of eggplant (medium, not too thick or thin)
Massage with oil and place in a baking tray. Sprinkle black pepper and cook in the oven for about 10 mins.
- Once the eggplants are ready and cooled down, apply basil pesto or any sauce you like.
Place a round tomato slice on the sauce, put some spinach leaves and place 2 prawns (depending on the size of the prawns).
- Garnish with black sesame seeds and spring onions.
