Cucumbers are mild, refreshing, and high in water content. It keeps you full and cool 🙂 I mostly have a cucumber boat as it gives me a wide range for snacking with a filling of my choice. You can try one and I promise you will start making a variety of it. I have made this cucumber boat with an egg-mayo salad.
Calories – 80c per boat
Prep time – 5 minutes
Cook time – 7 minutes (to boil the eggs)
2 Eggs (boiled)
Smoked Salmon (optional)
Seasoning (salt, pepper, and mayonnaise)
- Egg salad – Boiled eggs, salt, pepper and mayonnaise (mash all together).
- Cucumber boat – cut into half as shown in the pic and scoop out the seeded portion (inner part) with a spoon.
- Quick pat dry the inner part with a cloth or a tissue.
- Fill the egg-mayo salad.
- Garnish with smoked salmon pieces, dill herb and black sesame seeds.
