One Pan cooking is my favorite thing to do. It helps me lessen the mess in the kitchen and saves me a lot of time 🙂 This Breakfast pan in full of vegetables and proteins. You can add more vegetables of your choice.
3 Mushrooms (cut into pieces)
3 Cherry Tomatoes (cut into pieces)
Handful Kale or Spinach
Spring onions for garnish.
- Stir fry the Mushrooms, Cherry tomatoes, and Asparagus until they all are tender (cook for about 2 mins)
- Bring the mixture to the side of the pan and now crack 2 eggs (cook the eggs as you like, I like them sunny side up)
- Add Spinach or Kale leaves in the end (just wilted slightly)
Season with salt and pepper and garnish with spring onions. Enjoy the natural taste of vegetables 🙂
