Mango Coconut Cookies

These delish tropical cookies are made without baking or any flour. An easy cookie recipe keeping in mind low-calorie count, health benefits, and the taste. I have made these gooey, no-bake cookies with simple ingredients using the natural sweetness of mango and banana, earthy flavor from coconut, honey to taste, almond flour, and oats for consistency. You can refrigerate them for up to a week. Best served when cold.

Prep time – 5 minutes
Refrigerate – 1-hour minimum
Serves – 6 to 7 cookies

Ingredients :

1/2 Banana
1 Mango
5tbsp Oats (uncooked)
2tbsp Almond Flour (optional)
3tbsp Grated Coconut or desiccated Coconut
1tbsp Honey
1/2 tsp Vanilla extract
Garnish (desiccated coconut)

Recipe :

  • Blend all the above mentioned ingredients in a blender or using your hand well, until you have gooey dough (thick in consistency). You can adjust the consistency by adding more of any dry ingredients like oats, coconut or almond flour.
  • Make medium size cookies and garnish with desiccated coconut. Place in a container and refrigerate minimum for an hour before eating.
