Bunny chow, often referred to simply as a bunny, is a South African fast food dish consisting of a hollowed-out loaf of white bread filled with curry. It originated among Indian South Africans of Durban. I have made this dish with almond bread to make it healthy, however, you can simply make it with normal bread flour or a full unsliced loaf or a bun of bread ready from the store. An easy and speedy chicken curry recipe with a hearty bread basket 🙂
Calories – 400c (if using almond bread)
Prep time – 45 minutes, for the almond bread baking
Cooking time – 20 minutes, for the curry and assembling the bunny
Serves – 2
Ingredients :
1 Bread Loaf (unsliced, to cut into half) or 2 Bun Bread (one per person), to use it as a basket
250gms Chicken Cubes
1 medium-size Onion, chopped
1 medium-size Tomato, chopped
1 medium-size Potato (optional)
1 Carrot (optional)
2 Garlic Clove and a small piece of Ginger (or ginger-garlic paste)
2 Green or Red Chili
Seasoning (salt, black pepper, lemon juice, turmeric, cumin powder, chili flakes, or any curry powder you have)
Garnish (cilantro/coriander)
For Almond Bread – 6tbsp Almond powder/flour, 4egss, 2tbsp gelatin, salt, 1tsp baking powder. Beat all well with a hand mixer and bake in a greased bread tin for about 35 minutes on low 200C.
Recipe :
- In a hot oil add chopped onion, chopped garlic (or 1tbsp ginger-garlic paste) cook until onions are translucent. Add chopped tomato and green/red chili, potato cubes, carrot pieces, salt, 1tsp chili flakes, 1tsp black pepper, dash of lemon juice, 1/2tsp turmeric, 1/2tsp cumin powder, 1tbsp curry powder and mix all well, cook until carrot and potato are half cooked. (around 10minutes)
- Add the chicken cubes, mix well. Add 1 cup water and cook well until the chicken is cooked and the curry is ready. Add handful chopped coriander/cilantro once ready. (you can manage the consistency by adding more water or cooking cream, optional.
- Make gentle cutting to the inner side of the bread from the top (like a shallow dish). Scrape out gently with your hand the soft white portion of the bread and keep it on the plate itself for serving.
- Fill the hollow part of the bread with the curry and garnish with chopped cilantro/coriander.
