Pumpkin and Green Beans Stew

One of my favorite Go-To dishes when I am looking for a flavorful vegetarian option. Pumpkin, being so versatile makes it easy to come up with different cooking ideas. In this recipe, I have made a simple stew using Pumpkin and Green Beans with a dash of coconut milk to give it a tropical taste.
This recipe is under 10 minutes and needs a few ingredients only. Without any further ado, I would like to share this delicious recipe with you in this post.

Prep Time – 2 minutes
Cook time – 8 minutes
Serves – 2

Ingredients:

150gms Yellow Pumpkin
150gms Green Beans
1 Medium-size Onion
1 Small Tomato (optional)
2 Garlic Cloves
1 Cup Coconut Milk
Seasoning (Cumin powder, Coriander powder, Turmeric powder, Red Chili Powder, Black Pepper Powder, and Salt to taste)
Garnish (Coriander/Cilantro, optional)

Recipe:

  • Cut the pumpkin into long stems (if possible). Cut the head and tail of the beans.
    In a pan heat 2Tbsp olive oil, add 2 chopped garlic cloves, and cook for a few seconds until fragrant. Add 1 sliced onion and cook until soft.
  • Add the chopped tomato, green beans, 1Tsp cumin,1 Tsp coriander, 1Tsp red chili, 1Tsp turmeric, 1Tsp black pepper powder, and salt to taste, and cook for 1 minute.
  • Add the pumpkin and 1 cup coconut milk and mix well. Cook for about 7 minutes or until the beans are tender and soft.

Garnish with chopped coriander. You can eat this as a side dish or a main. I prefer having it with steamed rice or a slice of sourdough.
