Tom Kha Gai Soup

Tom Kha Gai translates to Chicken Soup with Galangal.  Tom means SOUP, Kha means GALANGAL and Gai means CHICKEN. However, I am using Ginger instead of Galangal. Some Asian stores do have galangal. The cooking process is super easy, and in 20 minutes, you will have a pot of creamy, aromatic, sour, savory, and mouthwatering soup. You can use any vegetables you want in this soup.

Serves – 2

Ingredients :

200g Chicken Breast Pieces
1 Onion (cut into small pieces)
1 Carrot (cut into small pieces)
Handful Pak Choy (optional)
Handful Pasta (optional)
2tbsp Fish sauce or Soy sauce
3 Kaffir Lime Leaves or 2tbsp Lemon Juice
2 small pieces of Lemon Grass
1 Garlic Clove, 1 small piece of Ginger/Galangal
1 cup Coconut Milk (you can make coconut milk using the powder or canned)
2tbsp Cooking Cream (optional)
2 Thai Red Chili (normal Red Chili will do as well)
Seasoning (salt, black pepper, red chili flakes, 2 cardamom cloves, 1 bay leaf)
Garnish (cilantro/coriander)

Recipe :

  • In a pot bring chicken to boil in 3 cups of water. Add 2 cardamom cloves, 1 bay leaf, 2 red chopped chilies, pinch of salt and 1tbsp black pepper. Let it cook well for 10 minutes.
  • Meanwhile in a pan heat 2tbsp coconut oil, add chopped onions, chopped garlic and ginger, cook well until fragrant and soft.
  • After 10 minutes of boiling the chicken stock, remove the cardamom clove and bay leaf. Now to the chicken stock add carrot pieces, cooked onion, garlic and ginger, 3kaffir lime leaves, 2 small pieces of lemon grass, 2tbsp fish sauce/soy sauce, 1tbsp red chili flakes, add handful pasta and cook for 5minutes.
  • Add 1 cup coconut milk, 2tbsp cooking cream and cook for another 5minutes on low simmer or until the pasta is done. You can add Pak-Choy just 2minutes before switching off the stove as the pak-choy wilts within a minute.

Garnish with a handful of coriander or cilantro. I have tried my best to get the dish close to its authentic taste.
