Oats Coconut Truffle

Oats are a cereal commonly eaten in the form of oatmeal or rolled oats and they have a range of potential health benefits. These energy bombs are made of oats and coconut, which will open the floodgate of flavors. I am excited to share with you this no baking, no flour, and super easy energy balls, which I call bombs 🙂

Calories – 60c per truffle
Prep time – 1 hour (to chill)

Ingredients :

4 tbsp. Oats
1 Banana (mashed)
4 tbsp. Coconut (grated)
1 tbsp. Peanut Butter (optional)
1-2 tbsp. Honey
Garnish (desiccated coconut, optional)

Recipe :

  • Blend all the above mentioned ingredients, that is Oats, Banana, Grated Coconut, Honey, and Peanut Butter in a food processor or you can give a good mix with your hand mashing all the ingredients well.
  • Once a soft, gooey and sticky mixture is ready, make small balls.
If you are garnishing with desiccated coconut, roll the balls in a handful of desiccated coconut covering it completely.
  • Refrigerate them for 30 minutes minimum before you eat them, as this will make it a little hard and crunchy. It is best served when cold.

These delicious and easy energy bombs can be stored in the refrigerator for up to 15-20 days. I always have a few stocked up and my family loves them. I will be sharing many more ideas like this in the near future. Please let me know in the comments section if you like this recipe or share tips and tricks with me via contact me on the homepage.
