Miso Soup

Miso soup is a traditional Japanese soup consisting of a soft miso paste, mixed with dashi stock. Miso soup is one of the lowest-calorie intake food items. If you do not have miso paste, it is absolutely alright! you can still enjoy this comforting soup with simple ingredients always found in your kitchen. A speedy soup with a choice of your vegetables and meat, However it tastes really good when made with Prawns and/or Tofu. I have made the classic one with prawns and mushrooms in less than 8 minutes.

Ingredients :

2 tbsp. Miso Paste (if you do not have one, soy sauce, black pepper, and lemon juice is fine)
150gms Prawns
2 pieces Mushrooms
Handful Pak Choi aka Bak Choy
1 clove Garlic
3 cups Water
Handful Spring onions
Handful Rice Noodles (optional)
Seasoning (soy sauce, black pepper, salt, red chili flakes, and lemon juice)

Calories – 180c
Prep time – 2 minutes
Cooking time – 7 minutes
Serves – 2 bowls

Recipe :

  • In a sauce pan add few drops of oil on low simmer and chopped garlic until fragrant and soft. Add miso paste (if you do not have miso paste, add 2 tbsp. soy sauce, 1 tsp. lemon juice, 2 tbsp. of black pepper) and give a good stir
  • Add diced mushrooms, handful rice noodles(optional), 1 tsp salt, and 3 cups water (add 1 tbsp. soy sauce if using the miso paste) stir well. Cook for 5 minutes.
  • Add Prawns and Pak Choi. Cook for another 2 minutes.
  • Divide the soup in two bowls. Garnish with chopped spring onions. Sprinkle some black pepper and red chili flakes.

You can add in more vegetables like bell pepper or carrots and a variety of meat like chicken or fish, keeping in mind the cooking time will differ.
