Stuffed bell pepper is a dish common in many cuisines. It makes a refreshing, easy and low carb meal for any time during the day. I have made my stuffed bell pepper version with a simple chicken slaw and skipped the cheese 🙂 however, you can always add some cheese during the baking process if you like.
2 big Bell Pepper (any color)
200gms Chicken (boiled and shredded)
Seasoning (salt, black pepper, mayonnaise, chili sauce, cilantro/coriander, and chili flakes)
Garnish (black sesame)
Calories – 90 per bell pepper
Prep time – 10 minutes
Cooing time – 15 minutes
Serves – 2
- Boil the chicken until cooked, this should take around 10 minutes. Once cooled down, shred in to small pieces and make a chicken slaw by mixing the shredded chicken, salt, black pepper, chili flakes, mayonnaise, chili sauce and chopped cilantro/coriander.
- Preheat the oven for about 10 minutes on 180C.
- Cut the head of the bell pepper and deseed it. massage inside and outside well with some oil.
Stuff the chicken slaw in the bell pepper, you can sprinkle some cheese if you like on the top and bake for about 15 minutes or until the bell peppers are tender and cooked. Garnish with black sesame seeds.
