Mushroom Toast

A vibrant start to my day with this delicious breakfast toast with a mixed berries smoothie. a speedy recipe and made with very little effort with basic ingredients you have at home. You can also load it with a lot of cheese and call it a pizza toast. Be generous with the mushrooms, as it loses water once it is heated and becomes small in quantity. You can add in more vegetables or even meat if you like, however, I have kept this really simple and meat-free 🙂

Prep time – 5 minutes
Cooking time – 5 minutes
Serves – 2

Ingredients :

2 Slices of Bread (of your choice)
5 Button Mushrooms
2 Garlic Clove
3tbsp Cooking Cream (optional)
2tbsp Butter
Handful Spinach Leaves
1/2 Bell Pepper
2 Cheese Slices (any of your choice)
Seasoning (salt, black pepper, 1green chili, and chili flakes)

Recipe :

  • In a pan heat butter, add minced garlic cloves, diced mushrooms, bell pepper and green chili, cook for about 2 minutes.
  • Add salt, black pepper, chili flakes ,spinach leaves and mix well. Add cooking cream and let it cook for about a minute. Meanwhile toast the bread slices. Once ready place your choice of cheese slice on the toast and add the mushroom mixture to the toast.
  • Grease the pan with butter one more time and place the bread until the cheese is melted, about 1 minute or less (cover the pan with a lid, this will make the cheese melt faster and the toast crunchy)
