Peanut Sauce Pasta Salad

Peanut Sauce had become very popular lately in cooking. Of course because of its crunchy and delicious taste. Peanut sauce when mixed with the tangy and fruity items opens the floodgate of tastiness. I will share with you an easy and simple peanut sauce recipe. I always make extra and refrigerate for up to 3 days. It complements any meat or it is just amazing to have on its own.

Calories – 200c
Prep time – 8 minutes (to cook the pasta)
Cook time – 2 minutes
Serves 2

Ingredients :

150gms Pasta (cooked and cooled down)
Handful Lettuce (chopped)
50gms Peanuts or Walnuts
50gms Grapes (cut in halves)
50gms Dried Cranberry
50gms Sweet Corn (Drained from the can)
1 Cucumber
3 Tbsp Peanut Butter
1 Tbsp Honey
1 Tbsp Red Chili Flakes
1 Tbsp Olive Oil
1 Tbsp Lime/ Lemon Juice
1/2 Tbsp Black Pepper Powder
Garnish (Lemon wedge and Parmesan Cheese)

Recipe :

  • Cook the pasta in boiling water as per instructions. Drain and let it cool down.
  • In a bowl add chopped Lettuce, Grape Halves, Sweet Corn, Peanuts or Walnuts, Chopped Cucumber, Dried Cranberries, and Pasta and mix well.
  • Drizzle Olive Oil, 3Tbsp Peanut Butter sauce, 1 Tbsp Honey, 1 Tbsp Red Chili Flakes, 1 Tbsp Olive Oil, 1 Tbsp Lime/ Lemon Juice, 1/2 Tbsp Black Pepper Powder, salt to taste, and mix all well.
  • Garnish with some parmesan cheese and a lemon wedge.

This salt is best served when cold or at room temp.
