Beef & Vegetable Casserole

If you want to make a healthy casserole that is different from a traditional one, then this dish is for you! I have made a simple casserole with vegetables, macaroni, and meat with a few spices. There is no need to bake this dish. However, you can always sprinkle some cheese and bake for about 10 minutes if you like.

Prep time – 10 minutes
Cook time- 20 minutes
Serves – 2

Ingredients:

200gms Sirloin Beef Cubes (Marinated for 10 minutes in ginger-garlic paste.)
Half a stem of Leek
1 Onion
2 Garlic Cloves
2 Green Chilies
1 Potato
Handful Baby Okra (optional)
1 Carrot
100gms Macaroni
Seasoning (Black Pepper powder, Lemon Juice, Cumin powder, 1 Cinnamon stick, Red Chili Flakes, and salt to taste)
2 Cups water with 1 cube of Beef Stock
Garnish (Fresh Coriander or Parsely)

Recipe:

  • In a saucepan, Add Olive Oil, Beef Cubes, and Garlic Cloves. Sear and cook on both sides for about 7 minutes.
  • Add chopped Green Chilies, cubes of Onion, Potato, Carrot, and Chopped leek. Add 1 Tsp Black pepper powder, 1 Tsp Cumin powder, 1 Tsp Red chili Flakes, Cinnamon stick, and 1 Tbsp Lemon Juice. Mix well until the spices release aroma (for 2 minutes).
  • Add 2 Cup beef stock water, Macaroni, and Baby Okra (optional).
    Cover the lid and cook on a medium simmer for 10 minutes or until all the veggies and beef are tender. Make sure the veggies, macaroni, and meat soak in the water. Add salt to taste if needed.

Garnish with fresh Coriander and enjoy with a slice of bread or just on its own. A delicious, easy, and healthy Beef Casserole is no time. Please let me know in the comment section if you like this recipe.
