Chicken Fillet with Brown Lentils

Brown lentils are by far the most common variety of lentils, and probably the one that you see at your local grocery store. They can range in color from brown to dark black and generally have a mild, earthy flavor. They cook in about 15 to 20 minutes. I have paired brown lentils with simple peppery and zesty chicken along with some greens on the side. This dish will help you cut down on the carb intake and is always a good idea as an alternative to rice.

Cooking time – 25 minutes
Serves – 1

Ingredients :

150gms or 1 cup Brown Lentils
150gms Chicken Breast
Salad Leaves
Celery Stick (optional)
Seasoning (onion powder, salt, pepper, chili flakes, lemon juice, cilantro/coriander, and thyme or parsley)

Recipe :

  • Marinate the chicken breast with onion powder, salt, pepper, thyme or parsley (any dried herbs will do as well for flavor). Marinate for about 20mins or longer if you have enough time. Shallow fry until cooked.
  • Meanwhile cook the brown lentils in boiling water for about 15-20 mins or until the lentils are cooked. Drain the excess water if any left.
  • In a sauce pan heat some oil, cook onions until soft and brown. Add chopped garlic until fragrant. Add salt, pepper, chili flakes. Add chopped parsley and cook for about 2 minutes.
  • Add lentils, lemon juice, and chopped cilantro/coriander. Give it a good stir and remove from heat.

    Serve the lentils and chicken with some salad on the side. Enjoy this yummy and high protein meal.
