Brussels Sprouts & Bok Choy Stir-fry

Stir-fry dishes are the best when running out of time on a busy day. I always like to keep my stir-fries really simple and easy. this dish is best served as a side or just on its own. I won’t take your time here and keep you hanging to read my long recipe story, in fact, I would like to jump straight to the recipe and share this delicious and nutritious dish with you, which is just under 10 minutes.

Calories – 120c
Prep Time – 2 Minutes
Cook Time – 8 Minutes
Serves – 2

Ingredients:

100gms Brussels Sprouts (slit into halves)
A handful of Bok Choy
2 tbsp Butter
2-3 Garlic Cloves (finely minced)
Seasoning (salt, black pepper powder, red chili flakes, lemon juice)
Garnish (crushed or whole walnuts)

Recipe:

  • Heat 2 Tbsp butter in a pan and add minced garlic and brussels sprouts.
  • Add black pepper powder, red chili flakes, lemon juice salt to taste. Add a dash of water to cook the brussels sprouts for about 6 to 7 minutes.
  • Switch off the stove and ass Boy Choy, and cover the lid of the pan so that the boy choy is cooked with the steam.
  • Garnish with chopped walnuts for the crunchy and nutty flavor.

Serve with your choice of meat or just on its own with a light dressing. I hope you enjoy this quick recipe.
