Ricotta and Salmon Rice Cakes

One of my favorite ways for how to eat rice cakes for a dainty and easy snack is the savory one. This is also¬†good for breakfast. I have used brown rice cakes in this recipe. However, you can use white rice cakes too. This crunchy and quick-to assemble dish is always my ‘go-to’ snack. I have used some fresh ricotta cheese and smoked salmon and kept it really simple. I know there are plenty of ideas out there to make your rice cakes tempting. I would like to share with you these flavorful rice cake bites.

Calories – 180c per rice cake
Prep time – 2 minutes
Serves – 1 or 2

Ingredients :

2 Rice cakes
A small strip of Smoked Salmon (cut into halves)
2 Tbsp Ricotta (drained)
2 Cherry Tomatoes (cut into halves)
4 Basil Leaves
Handful Sunflower seeds, optional)
Handful Dry Cranberry
BBQ sauce (you can your any sauce you have)
Seasoning (black pepper powder)

Recipe :

  • Spread 1 Tbsp of ricotta on each rice cake.
  • Place smoked salmon and cherry tomatoes, Sprinkle some sunflower seeds and dry cranberries.
  • Place some basil leaves sprinkled with some black pepper powder and a drizzle of BBQ sauce.
